Method
Preparation of Brisket

Prepare the Brisket
Trim excess fat from the brisket, leaving about 1/4 inch of fat for flavor.

Season the Brisket
In a small bowl, mix together salt, black pepper, garlic powder, onion powder, paprika, and brown sugar. Rub the spice mixture all over the brisket, ensuring it is evenly coated.
Smoking Process

Prepare the Smoker
Preheat your smoker to a temperature of 225°F (107°C). Soak the wood chips in water for 30 minutes, then drain.

Smoke the Brisket
Place the brisket on the smoker grates, fat side up. Add the soaked wood chips to the smoker box. Smoke the brisket for approximately 1 hour per pound, or until it reaches an internal temperature of 195°F (90°C).
Resting and Serving

Rest the Brisket
Once the brisket has reached the desired temperature, remove it from the smoker and wrap it in aluminum foil. Let it rest for at least 30 minutes before slicing.

Serve
Slice the brisket against the grain and serve with your choice of sauce, such as barbecue sauce mixed with apple cider vinegar, honey, and Worcestershire sauce.
