Cook the Chicken or Pork
In a skillet over medium heat, cook the chicken breast or pork loin for about 7-10 minutes on each side until fully cooked. Ensure the internal temperature reaches 165°F (75°C) for chicken or 145°F (63°C) for pork. Once cooked, let it rest and then shred or chop into bite-sized pieces.

Mix with BBQ Sauce
In a mixing bowl, combine the shredded chicken or pork with BBQ sauce. Stir until the meat is evenly coated. Set aside.
Pico de Gallo Preparation

Prepare the Pico de Gallo
In a separate bowl, combine diced tomatoes, finely chopped red onion, chopped cilantro, lime juice, and salt. Mix well and let it sit for 10 minutes to allow the flavors to meld.
Assembling the Quesadilla

Assemble the Quesadilla
Place a tortilla in a greased skillet over medium heat. On one half of the tortilla, layer 1/2 cup of the BBQ chicken or pork mixture, followed by 1/2 cup of shredded cheese. Fold the tortilla over to cover the filling.

Cook the Quesadilla
Cook for about 3-4 minutes on each side until the tortilla is golden brown and the cheese is melted. Repeat with the remaining tortillas and filling.

Cut the quesadillas into wedges and serve hot with pico de gallo, sour cream, and salsa on the side.
