Dough Preparation

    Activate Yeast

    In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 10 minutes until frothy.

    Mix the Dough

    In a large mixing bowl, combine flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.

    Knead the Dough

    Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic.

    First Rise

    Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.

    Shape the Bread

    Once risen, punch down the dough and divide it into 8 equal pieces. Shape each piece into a ball and flatten slightly.

    Second Rise

    Cover the dough balls with a cloth and let them rest for 30 minutes.

    Cook the Bread

    Heat a skillet over medium-high heat. Cook each piece of dough for about 2-3 minutes on each side until golden brown and puffed up.

    Serve Warm

    Serve the warm gyro bread immediately with a sprinkle of za’atar on top, if desired.
