Kofte Preparation

Make the Kofte

In a large bowl, combine ground lamb, minced garlic, chopped parsley, cumin, coriander, salt, black pepper, and olive oil. Mix well until all ingredients are evenly incorporated.

Shape the Kofte

Divide the mixture into 6 equal portions and shape each portion into a patty.

Cook the Kofte

Heat a grill or skillet over medium-high heat. Cook the patties for about 4-5 minutes on each side, or until cooked through.

Tomato Butter Preparation

Make the Tomato Butter

In a small bowl, mix softened butter, tomato paste, chopped basil, and salt until smooth and well combined.

Yogurt Sauce Preparation

Make the Yogurt Sauce

In another bowl, combine Greek yogurt, minced garlic, lemon juice, and salt. Mix well and set aside.

Sumac Onions Preparation

Prepare the Sumac Onions

In a bowl, combine thinly sliced red onion, sumac, and salt. Toss to coat the onions in the sumac.

Assembly

Assemble the Sliders

Spread a layer of tomato butter on the bottom half of each slider bun. Place a kofta patty on top, followed by a dollop of yogurt sauce, a few slices of sumac onions, and pickles. Top with the other half of the bun.
