    Prepare the Brussels Sprouts

    Preheat your oven to 400°F (200°C). Trim the ends of the Brussels sprouts and cut them in half.

    Roast the Brussels Sprouts

    Toss the Brussels sprouts with olive oil, salt, and pepper. Spread them on a baking sheet and roast for about 20-25 minutes until golden brown and crispy.

    Cook the Chorizo

    In a skillet over medium heat, cook the chorizo for about 5-7 minutes until browned and crispy. Remove from the skillet and set aside.

    Make the Hazelnut Migas

    In the same skillet, add the torn bread and cook until golden brown, stirring frequently. Add the minced garlic, smoked paprika, chopped hazelnuts, and cooked chorizo (if using). Stir to combine and cook for another 2-3 minutes.

    Prepare the Aioli

    In a small bowl, mix together mayonnaise, minced garlic, lemon juice, and salt to taste.

    Serve

    Plate the roasted Brussels sprouts and top with the hazelnut migas and a generous drizzle of aioli.
