1. Prepare the Shrimp
In a bowl, combine olive oil, minced garlic, cumin, paprika, coriander, cinnamon, salt, and black pepper. Add the shrimp and toss to coat well. Let marinate for at least 15 minutes.
2. Cook the Shrimp
Heat a skillet over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes on each side, or until shrimp are pink and cooked through.
3. Make the Sauce
In a small bowl, mix together tamarind paste and tahini until well combined. Adjust seasoning to taste.
4. Assemble the Wraps
Take a lettuce leaf and place some cooked shrimp inside. Drizzle with tamarind-tahini sauce and top with crispy black rice. Roll the lettuce leaf around the filling to create a wrap.
5. Serve
Serve the shrimp shawarma wraps immediately, garnished with extra sauce if desired.
