    Prepare the Fregola

    In a large pot of boiling salted water, cook the fregola according to package instructions until al dente. Drain and set aside.

    Roast the Squash

    Preheat the oven to 400°F (200°C). Toss the diced honey nut squash with olive oil, salt, and pepper. Spread on a baking sheet and roast for about 25 minutes or until tender and lightly caramelized.

    Cook the Aromatics

    In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.

    Combine Ingredients

    Add the cooked fregola, roasted honey nut squash, cooked freekeh, and chopped sundried tomatoes to the skillet. Stir to combine and heat through.

    Prepare the Sauce

    In a bowl, whisk together the eggs, grated Parmesan cheese, salt, and black pepper. Remove the skillet from heat and quickly pour the egg mixture over the fregola mixture, tossing quickly to create a creamy sauce.

    Garnish with fresh parsley and more grated Parmesan if desired. Serve immediately.
