1. Prepare the Gnocchi

Cook the gnocchi according to package instructions. Drain and set aside.

2. Cook the Pancetta

In a large skillet, cook the pancetta over medium heat until crispy. Remove and set aside.

3. Sauté the Parsnip and Apple

In the same skillet, add diced parsnip and apple. Sauté until tender, about 8-10 minutes.

4. Make the Sage Brown Butter

In a saucepan, melt the butter over medium heat. Add sage leaves and cook until the butter turns golden brown and nutty, about 5 minutes.

5. Combine the Ingredients

Add the cooked gnocchi, sautéed parsnip, apple, and crispy pancetta to the skillet. Pour the sage brown butter over the top. Toss gently to combine.

6. Season and Serve

Season with salt and black pepper to taste. Serve warm and enjoy!
