Prepare the Pudding
In a large saucepan, combine the rice flour, coconut milk, sugar, cinnamon powder, cardamom powder, and salt. Whisk together until smooth.
Cook the Mixture
Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and starts to bubble. This should take about 10-15 minutes.
Set the Pudding
Once thickened, pour the pudding into a serving dish or individual bowls. Allow it to cool to room temperature, then refrigerate for at least 2 hours or until set.
Prepare the Toppings
While the pudding sets, prepare the toppings by toasting the mixed nuts lightly in a dry skillet over medium heat until fragrant, about 5-7 minutes.
Serve
Once the pudding is set, top with grated coconut, toasted mixed nuts, and a sprinkle of cinnamon before serving.
