Preparation and Cooking
1. Marinate the Meat
In a bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and black pepper. Add the chicken or pork, ensuring it's well-coated. Cover and marinate in the refrigerator for at least 1 hour, preferably overnight.
2. Prepare the Tzatziki
In a separate bowl, combine Greek yogurt, diced cucumber, minced garlic, chopped dill, and salt. Mix well and refrigerate until ready to serve.
3. Grill the Meat
Preheat the grill to medium-high heat. Remove the meat from the marinade and skewer if desired. Grill the meat for about 6-8 minutes per side, or until cooked through and slightly charred.
4. Warm the Pita
While the meat is grilling, warm the pita bread on the grill for about 1-2 minutes on each side until soft and pliable.
5. Serve
Serve the grilled meat with warm pita bread and a generous side of tzatziki sauce. Garnish with additional diced cucumbers and fresh dill if desired.
