Main Ingredients

Method

Preparation

  1. 1

    Clean the Clams

Rinse the baby clams under cold water to remove any sand or debris. Soak them in a bowl of water for 20 minutes to help expel any remaining sand.

  2. 2

    Chop the Garlic and Parsley

Peel and finely mince the garlic cloves. Roughly chop the fresh parsley and set aside.

  3. 3

    Prepare the Tomatoes

Halve the cherry tomatoes and set aside for cooking.

Cooking

  1. 4

    Heat the Olive Oil

In a large skillet or wok, heat 2 tablespoons of olive oil over medium heat until shimmering.

  2. 5

    Sauté Garlic

Add the minced garlic to the skillet and sauté for about 1 minute, or until fragrant but not browned.

  3. 6

    Add Tomatoes and Wine

Stir in the halved cherry tomatoes and cook for 2-3 minutes until they start to soften. Then, pour in 1 cup of white wine.

  4. 7

    Cook the Clams

Add the cleaned baby clams to the skillet. Cover with a lid and cook for about 5-7 minutes, or until all the clams have opened. Discard any clams that do not open.

  5. 8

    Season the Dish

Once the clams are cooked, season the mixture with salt, black pepper, and red pepper flakes. Stir in the chopped parsley before serving.
