Dumpling Dough Preparation

    Make the Dough

    In a bowl, mix the all-purpose flour and salt. Gradually add water while stirring until the mixture forms a dough.

    Knead the Dough

    Transfer the dough to a lightly floured surface and knead for about 5-7 minutes until smooth and elastic.

    Rest the Dough

    Cover the dough with a damp cloth and let it rest for at least 30 minutes.

Shrimp Filling Preparation

    Prepare the Shrimp

    Chop the raw shrimp into small pieces or pulse in a food processor until coarsely minced.

    Mix the Filling

    In a bowl, combine the minced shrimp, green onions, garlic, ginger, soy sauce, sesame oil, salt, and black pepper. Mix until well combined.

Dumpling Assembly and Cooking

    Roll out the Dough

    Divide the rested dough into small pieces. Roll each piece into a thin circle about 3 inches in diameter.

    Fill the Dumplings

    Place about 1 tablespoon of the shrimp filling in the center of each dough circle. Fold the dough over to create a half-moon shape and pinch the edges to seal.

    Line a steamer basket with parchment paper or cabbage leaves to prevent sticking.

    Steam the Dumplings

    Place the dumplings in the steamer basket, leaving space between them. Steam over boiling water for about 8-10 minutes until the shrimp is cooked through.
