Preparation
1. Prepare the Rice Noodles
Soak the rice noodles in warm water for about 20 minutes or until they are soft, then drain and set aside.
2. Prepare the Shrimp
Peel and devein the shrimp if necessary. Rinse under cold water and pat dry with paper towels.
3. Chop the Vegetables
Slice the bell pepper, julienne the carrot, and chop the green onions. Mince the garlic.
Cooking
4. Stir-fry the Shrimp
In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Add the shrimp and cook for 2-3 minutes until they turn pink. Remove the shrimp and set aside.
5. Cook the Vegetables
In the same skillet, add a little more oil if necessary, then add the minced garlic and stir-fry for 30 seconds. Add the sliced bell pepper, julienned carrot, and green onions. Stir-fry for another 3-4 minutes until the vegetables are tender-crisp.
6. Combine Ingredients
Return the cooked shrimp to the skillet with the vegetables. Add the soaked rice noodles and all the sauce ingredients (soy sauce, fish sauce, lime juice, and chili flakes). Toss to combine and cook for an additional 2-3 minutes until heated through.
Serving
7. Garnish and Serve
Remove the skillet from heat. Transfer the shrimp and rice noodle mixture to a serving platter. Garnish with chopped cilantro and serve with lime wedges on the side.
