Preparing Rice

    Cook the Rice

    In a medium pot, combine the jasmine rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until rice is tender and water is absorbed. Remove from heat and let it sit covered for another 5 minutes.

Cooking Seafood

    Sauté the Seafood

    In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the shrimp, scallops, and squid. Sauté for about 3-5 minutes or until the seafood is cooked through and opaque. Remove from the skillet and set aside.

Cooking Vegetables

    Stir-Fry the Vegetables

    In the same skillet, add 2 tablespoons of vegetable oil. Add diced bell pepper, julienned carrot, and green peas. Stir-fry for 3-4 minutes until the vegetables are tender-crisp. Add minced garlic and ginger, and sauté for an additional 1 minute until fragrant.

Combining Ingredients

    Mix Everything Together

    Add the cooked rice to the skillet with the vegetables. Pour in the tomato sauce and soy sauce. Stir well to combine all ingredients. Add the cooked seafood back to the skillet, and mix gently. Season with salt and black pepper to taste.

Finishing Touches

    Garnish and Serve

    Remove from heat and sprinkle sliced green onions on top. Serve the special fried rice hot, and enjoy!
