Tuna

Cranberry Cabernet Sauce

Method

Prepare the Tuna

  1. 1

    Season the Tuna

Sprinkle salt and black pepper evenly over both sides of the tuna steaks.

  2. 2

    Coat with Sesame Seeds

Place sesame seeds on a plate and press each tuna steak into the seeds, ensuring both sides are evenly coated.

  3. 3

    Sear the Tuna

Heat olive oil in a skillet over medium-high heat. Once hot, add the tuna steaks and sear for about 1-2 minutes on each side for rare doneness. Adjust time for desired doneness. Remove from heat and let rest.

Make the Cranberry Cabernet Sauce

  1. 4

    Combine Ingredients

In a saucepan, combine fresh cranberries, Cabernet Sauvignon, sugar, orange zest, and the cinnamon stick.

  2. 5

    Cook the Sauce

Bring the mixture to a boil over medium heat, then reduce to a simmer. Cook for about 10-15 minutes, stirring occasionally, until the cranberries burst and the sauce thickens. Remove from heat and discard the cinnamon stick.

  3. 6

    Blend (Optional)

For a smoother sauce, blend the mixture using an immersion blender or transfer to a regular blender and puree until desired consistency is reached.
