In a large skillet, melt the butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add the shrimp and cook until pink and opaque, about 3-4 minutes.

Stir in the diced plum tomatoes, pea pods, and chopped scallions. Cook for an additional 3-4 minutes until the vegetables are tender.

Pour in the heavy cream and stir to combine. Let the mixture simmer for 5 minutes, allowing the sauce to thicken slightly.

Season the Sauce
Season with salt and black pepper to taste. Stir in the grated Parmesan cheese until melted and well incorporated.

Combine Noodles and Sauce
Add the cooked noodles to the cream sauce and toss gently to coat the noodles evenly.

Divide the noodle mixture among serving plates and garnish with extra scallions if desired. Serve immediately.
