Prepare Chicken

Season the Chicken
Pat the chicken breasts dry with paper towels. Season both sides with salt and black pepper.

Heat the Oil
In a large skillet, heat olive oil over medium-high heat until shimmering.

Sear the Chicken
Add the seasoned chicken breasts to the skillet. Cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is golden brown.

Rest the Chicken
Remove chicken from the skillet and let it rest for about 5 minutes before slicing.
Make Coconut Curry Sauce

Add Coconut Milk and Broth
Pour in the coconut milk and vegetable broth. Stir to combine.

Mix in Curry Powder
Add curry powder to the skillet and stir well. Let the sauce simmer for about 5-7 minutes, until it thickens slightly.

Finish the Sauce
Stir in lime juice and chopped cilantro just before serving.

Plate the Dish
Slice the rested chicken breasts and arrange them on a plate. Spoon the coconut curry sauce over the chicken.
