Make the Dough
In a large bowl, combine the all-purpose flour and salt. Gradually add water while mixing until a dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

Prepare the Filling
In a bowl, combine ground pork, chopped green onions, minced garlic, grated ginger, soy sauce, sesame oil, salt, and black pepper. Mix well until all ingredients are thoroughly combined.

Shape the Potstickers
Divide the rested dough into small balls (about 1 inch in diameter). Roll each ball out into a thin circle (about 3 inches in diameter). Place about 1 tablespoon of filling in the center of each circle. Fold the dough over the filling to create a half-moon shape and pinch the edges to seal tightly.

Cook the Potstickers
In a large skillet, heat vegetable oil over medium-high heat. Add potstickers in a single layer, frying until the bottoms are golden brown (about 3-4 minutes). Carefully add 1 cup of water to the skillet, cover immediately, and reduce heat to medium. Steam the potstickers for about 6-8 minutes, or until the water has evaporated.

Remove the lid and let the potstickers cook for an additional 2 minutes to crisp the bottom. Serve hot with soy sauce or dipping sauce of your choice.
