Preparation of Rice

    Cook Sushi Rice

    Rinse 2 cups of sushi rice under cold water until the water runs clear. In a rice cooker or a pot, combine the rinsed rice with 2 ½ cups of water. Cook according to rice cooker instructions or bring to a boil, then reduce heat and simmer covered for 18-20 minutes. Remove from heat and let it sit covered for 10 minutes.

    Season the Rice

    In a small bowl, mix 1/3 cup rice vinegar, 2 tablespoons sugar, and 1 teaspoon salt until dissolved. Gently fold this mixture into the cooked rice using a wooden spatula. Allow the rice to cool to room temperature.

Preparation of Sauce

    Make the Unagi Sauce

    In a saucepan, combine 1 cup soy sauce, 1 cup mirin, 1 cup sake, and 3 tablespoons sugar. Bring to a simmer over medium heat, stirring until the sugar has dissolved. Reduce the heat and let it simmer for about 10-15 minutes until it thickens slightly. Remove from heat and let it cool.

Grilling the Unagi

    Prepare the Unagi

    If using fresh unagi, grill it over medium heat for about 5-7 minutes on each side until cooked through and charred. If using pre-cooked unagi, simply heat it in a skillet or on a grill for 3-4 minutes on each side.

    Glaze with Sauce

    During the last few minutes of grilling, brush the unagi with the prepared unagi sauce to add flavor and shine.

Assembly

    Assemble the Dish

    On a bamboo mat, place a sheet of nori. Spread a thin layer of sushi rice over the nori, leaving a margin at the top. Place a piece of grilled unagi in the center and roll it tightly. Repeat with the remaining ingredients.

    Slice the rolls into bite-sized pieces. Garnish with chopped green onions, sesame seeds, and serve with pickled ginger on the side.
