Sashimi

Spicy Tuna Roll

Method

Prepare Sashimi

  1. 1

    Slice the Fish

Using a sharp knife, slice the fresh tuna, salmon, yellowtail, and snapper into thin, bite-sized pieces, approximately 1/4 inch thick. Arrange the sashimi on a plate.

Prepare Sushi Rice

  1. 2

    Cook the Rice

Rinse 1 cup of sushi rice under cold water until the water runs clear. Cook in a rice cooker or saucepan according to package instructions. Once cooked, let it cool slightly.

  2. 3

    Season the Rice

In a small bowl, mix together 2 tablespoons of rice vinegar, 1 tablespoon of sugar, and 1/2 teaspoon of salt until dissolved. Fold this mixture into the warm sushi rice and let it cool to room temperature.

Make Spicy Tuna Filling

  1. 4

    Prepare the Spicy Mixture

In a bowl, combine 100 grams of finely chopped fresh tuna with 2 tablespoons of sriracha sauce and 2 tablespoons of mayonnaise. Mix well until the tuna is evenly coated.

Assemble Spicy Tuna Rolls

  1. 5

    Roll the Sushi

Lay a nori sheet on a bamboo sushi mat, shiny side down. With wet hands, take about 1/4 cup of sushi rice and spread it evenly over the nori, leaving a small border at the top. Place a few tablespoons of the spicy tuna mixture and a few julienned cucumber pieces in the center of the rice.

  2. 6

    Roll and Cut

Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to form a tight roll. Seal the edge of the nori with a little water. Repeat with the remaining nori sheets and fillings. Once all rolls are made, slice each roll into 6-8 pieces using a sharp knife.
