Prepare Sushi Rice

    Rinse the Rice

    In a sieve, rinse the sushi rice under cold water until the water runs clear. This removes excess starch.

    Cook the Rice

    In a rice cooker, combine the rinsed sushi rice and 2.5 cups of water. Cook according to the rice cooker's instructions.

    Season the Rice

    Once cooked, transfer the rice to a large bowl. Mix rice vinegar, sugar, and salt in a small bowl until dissolved, then gently fold this mixture into the warm rice using a wooden spatula. Allow to cool to room temperature.

Prepare Nigiri

    Shape the Rice

    Wet your hands with water to prevent sticking. Take a small handful of sushi rice and form it into an oval shape.

    Add Topping

    Place a slice of fresh fish on top of the shaped rice. Optionally, add a small dab of wasabi between the fish and rice.

Prepare California Maki

    Make the Filling

    In a bowl, combine imitation crab meat, diced avocado, diced cucumber, and mayonnaise. Mix until well combined.

    Prepare Nori

    Lay a nori sheet on a bamboo sushi mat, shiny side down.

    Add Sushi Rice

    Wet your hands and take a handful of sushi rice, spreading it evenly over the nori, leaving a small border at the top.

    Place a line of the crab mixture across the center of the rice.

    Roll the Sushi

    Using the bamboo mat, roll the sushi away from you, pressing gently to form a tight roll. Seal the edge with a little water.

    Using a sharp knife, slice the roll into bite-sized pieces and sprinkle with sesame seeds.
