Method

Prepare Sushi Rice

    Rinse the Sushi Rice

    Place the sushi rice in a fine-mesh sieve and rinse under cold water until the water runs clear. This removes excess starch.

    Cook the Rice

    In a rice cooker or a pot, combine the rinsed sushi rice and water. Cook according to the rice cooker's instructions or bring to a boil, then reduce to low heat, cover, and simmer for 20 minutes.

    Season the Rice

    In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and pour the vinegar mixture over the rice, folding gently to combine. Let it cool to room temperature.

Prepare the Fish Toppings

    Slice the Fish

    Using a sharp knife, slice the fresh salmon, tuna, eel, shrimp, yellowtail, and octopus into thin, even pieces, about 1/4 inch thick.
