Prepare the Sushi Rice

Rinse the Rice

Place the sushi rice in a fine mesh strainer and rinse under cold water until the water runs clear. This removes excess starch.

Cook the Rice

In a medium saucepan, combine rinsed sushi rice and 2.5 cups of water. Bring to a boil over high heat, then reduce to low, cover, and simmer for 18-20 minutes, or until the rice is tender and water is absorbed.

Season the Rice

In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, remove from heat and let it cool slightly. Pour the vinegar mixture over the rice and gently fold to combine without mashing the grains. Allow to cool to room temperature.

Prepare the Toppings

Slice the Fish

Using a sharp knife, slice the salmon, tuna, mackerel, and eel into thin pieces. Each slice should be about 1/4 inch thick.

Prepare the Shrimp

If using raw shrimp, boil them in salted water for about 2-3 minutes until they turn pink. Drain and cool before using.

Assemble the Nigiri

Form the Rice

Wet your hands with water to prevent sticking, take a small ball of sushi rice (about 2 tablespoons) and shape it into an oval.

Top with Fish

Place a slice of your chosen fish (salmon, tuna, mackerel, eel) on top of the rice. For shrimp, place it on top with the tail hanging over the edge.

Finish with Wasabi

Add a small amount of wasabi between the rice and the fish, if desired.

Presentation

Arrange the nigiri on a serving plate. Serve with soy sauce and pickled ginger on the side.
