    Prepare the Ingredients

    Rinse and pat dry the shrimp and scallops. Thinly slice the beef and chicken. Dice the carrot and bell pepper. Chop the green onions. Make sure the jasmine rice is cooked and cooled (preferably day-old rice works best).

    Cook the Proteins

    In a large wok or frying pan, heat 2 tablespoons of vegetable oil over medium-high heat. Add the shrimp and scallops, sauté for 2-3 minutes until they turn opaque. Remove from the pan and set aside.

    Cook the Beef and Chicken

    In the same pan, add another tablespoon of vegetable oil. Add the beef and chicken, and cook for about 5 minutes, or until cooked through. Remove and set aside with the seafood.

    Stir-Fry Vegetables

    Add the remaining tablespoon of vegetable oil, and sauté the garlic and ginger for about 30 seconds until fragrant. Then, add the diced carrot, bell pepper, and green peas. Cook for another 3-4 minutes until the vegetables are tender.

    Add Rice and Seasoning

    Add the cooked jasmine rice to the pan with the vegetables. Pour in the soy sauce, oyster sauce, sesame oil, salt, and black pepper. Stir well to combine and heat through.

    Combine Everything

    Return the cooked proteins (shrimp, scallops, beef, and chicken) to the pan. Mix everything well and allow it to heat together for about 2-3 minutes.

    Add Eggs and Finish

    Push the fried rice to one side of the pan, add a bit of oil if necessary, and pour the beaten eggs into the empty side. Scramble the eggs until fully cooked, then mix them into the rice. Finally, add the chopped green onions and stir to combine.

    Serve hot, garnished with additional green onions if desired. Enjoy your house fried rice!
