Wontons Preparation

Prepare the Filling
In a food processor, combine the shrimp, salmon, scallops, green onions, garlic, ginger, soy sauce, sesame oil, salt, and black pepper. Pulse until the mixture is well combined but still slightly chunky.

Assemble the Wontons
Place a wonton wrapper on a clean surface. Spoon about 1 teaspoon of the filling into the center of the wrapper. Moisten the edges with water and fold the wrapper in half to form a triangle, pressing to seal. Then, bring the two corners of the triangle together to form a wonton shape. Repeat with remaining wrappers and filling.

Make the Broth
In a large pot, combine the chicken broth, soy sauce, sliced ginger, smashed garlic, and whole green onions. Bring to a boil over medium-high heat. Once boiling, reduce the heat to low and let it simmer for about 15 minutes to infuse the flavors.

Season the Broth
Taste the broth and season with salt and white pepper according to your preference. Remove the ginger, garlic, and green onions before adding the wontons.
Cooking the Wontons

Cook the Wontons
Gently add the wontons to the simmering broth. Cook for about 5-7 minutes or until the wontons float to the surface and are cooked through. Be careful not to overcrowd the pot; you may need to do this in batches.
Serving

Serve the Soup
Ladle the wontons and broth into bowls. Garnish with chopped cilantro and serve with lime wedges on the side for an extra burst of flavor.
