Shrimp Preparation

Prepare the Shrimp
In a mixing bowl, combine the peeled and deveined shrimp, cornstarch, egg whites, salt, and black pepper. Toss until all the shrimp are well coated. Let it marinate for about 15 minutes.
Walnut Coating

Prepare the Coating
In a separate bowl, mix the chopped walnuts, panko breadcrumbs, garlic powder, and paprika together until evenly combined.
Honey Dew Sauce

Make the Sauce
In a blender, puree the honey dew melon until smooth. Add honey, lime juice, and chili flakes. Blend again until fully combined. Set aside.
Frying

Fry the Shrimp
Heat the vegetable oil in a deep frying pan over medium-high heat. Once the oil is hot, take each shrimp from the marinade, dip it in the walnut coating mixture, and carefully place it in the hot oil. Fry for about 2-3 minutes, or until golden brown and crispy. Use a slotted spoon to remove the shrimp and drain on paper towels.

Arrange the crispy walnut shrimp on a serving plate and drizzle the honey dew sauce over them. Serve immediately while hot.
