Method

Preparing Filet Mignon

    Season the Steaks

    Pat the filet mignon steaks dry with paper towels. Season both sides generously with salt and black pepper.

    Sear the Steaks

    In a large skillet, heat the olive oil over medium-high heat. Once hot, add the seasoned filet mignon steaks to the skillet. Sear for about 3-4 minutes on each side for medium-rare, or until your desired doneness is reached.

    Add Butter

    During the last minute of cooking, add the butter to the skillet. Spoon the melted butter over the steaks to enhance flavor.

    Rest the Steaks

    Remove the steaks from the skillet and let them rest on a cutting board for about 5 minutes.

Making Black Pepper Sauce

    Prepare the Shallots

    Finely chop the shallots.

    Toast the Peppercorns

    In the same skillet used for the steaks, add the black peppercorns and toast them over medium heat for about 1 minute until fragrant.

    Sauté the Shallots

    Add the chopped shallots to the skillet and sauté until they are translucent, about 2-3 minutes.

    Deglaze with Red Wine

    Pour in the red wine, scraping the bottom of the skillet to release any browned bits. Bring to a simmer and reduce by half.

    Add Beef Broth and Cream

    Stir in the beef broth and bring to a simmer again. Reduce the heat and add the heavy cream, stirring until the sauce thickens slightly.

    Season the Sauce

    Taste the sauce and adjust seasoning with salt, as needed.
