Directions

  1. 1

    Prepare the Noodles

Begin by cooking the chow mein noodles according to the package instructions. Once cooked, drain and set aside.

  2. 2

    Marinate the Chicken

Slice the chicken breast into thin strips and place them in a bowl. Add 2 tablespoons of soy sauce and let it marinate for about 15 minutes.

  3. 3

    Stir-Fry the Chicken

In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the marinated chicken strips and stir-fry until cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

  4. 4

    Sauté Vegetables

In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and ginger, sauté for about 30 seconds until fragrant. Then, add the carrots, bell pepper, and snow peas. Stir-fry for 3-4 minutes or until the vegetables are tender-crisp.

  5. 5

    Combine Chicken and Vegetables

Return the cooked chicken to the skillet with the sautéed vegetables. Add the remaining tablespoon of soy sauce and the oyster sauce, stirring to combine well.

  6. 6

    Add Noodles and Final Seasoning

Add the cooked chow mein noodles to the skillet. Pour in the sesame oil, and season with salt and pepper to taste. Toss everything together until well combined and heated through, about 2-3 minutes.

  7. 7

    Garnish and Serve

Remove from heat, garnish with chopped green onions, and serve hot.
