Clean the Squid
Begin by cleaning the squid. Remove the head, innards, and skin. Rinse the body and tentacles under cold water, and slice the body into rings about 1/2 inch wide.

Prepare the Breading
In a medium bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and paprika. Mix well. In another bowl, whisk together the eggs and milk until smooth.

Coat the Squid
Dip each squid ring first into the egg mixture, allowing excess to drip off, then coat it in the flour mixture. Shake off any excess flour and set aside on a plate.

Heat the Oil
In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C). Use a thermometer for accuracy.

Fry the Calamari
Carefully add a few squid rings to the hot oil, avoiding overcrowding. Fry for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.
