    Prepare the Beef

    Thinly slice the beef sirloin against the grain into strips about 1/4 inch thick.

    Chop the Vegetables

    Cut the broccoli into small florets, julienne the carrot, and slice the bell pepper into thin strips. Chop the green onions and set aside.

    Make the Teriyaki Sauce

    In a bowl, combine soy sauce, brown sugar, rice vinegar, sesame oil, minced garlic, and grated ginger. Mix until the sugar is dissolved. In a small bowl, mix cornstarch and water to create a slurry, then add to the sauce mixture and stir until well combined.

    Cook the Beef

    In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the sliced beef and stir-fry for about 3-5 minutes, or until browned and cooked through. Remove beef from the skillet and set aside.

    Stir-fry the Vegetables

    In the same skillet, add a little more oil if necessary, then add the broccoli, carrot, and bell pepper. Stir-fry for about 3-4 minutes until they are tender-crisp.

    Combine and Sauce

    Return the cooked beef to the skillet with the vegetables. Pour the teriyaki sauce over the beef and vegetables, stirring to coat everything evenly. Continue to cook for another 2-3 minutes until the sauce thickens.

    Garnish and Serve

    Remove from heat and garnish with chopped green onions. Serve the Beef Teriyaki over steamed rice or noodles, if desired.
