    Prepare Ingredients

    Chop all the vegetables (green peppers, onions, mushrooms, tomatoes) and set aside. Cook the bacon until crispy, then crumble it into small pieces. Cube the ham.

    Whisk Eggs

    In a large bowl, whisk together the eggs, salt, and pepper until well combined.

    Cook Vegetables

    In a large skillet, melt 1 tablespoon of butter over medium heat. Add the onions, green peppers, and mushrooms. Sauté until softened, about 5 minutes. Add the tomatoes and cooked bacon and ham, and mix well.

    Make the Omelet

    Pour the egg mixture over the sautéed vegetables and meats in the skillet. Cook until the edges start to set, then gently lift the edges with a spatula, allowing uncooked egg to flow underneath.

    Add Cheese and Finish Cooking

    Once the omelet is mostly set but still slightly runny on top, sprinkle cheddar cheese on one half of the omelet. Fold the other half over the cheese and cook for another 1-2 minutes until the cheese is melted and the omelet is fully cooked.

    Slide the omelet onto a plate and cut in half if desired. Serve hot.
