Prepare the Remoulade Sauce

In a bowl, combine mayonnaise, Dijon mustard, cayenne pepper, chopped pickles, and lemon juice. Mix well and set aside.

Prepare the Shrimp

In a shallow bowl, mix together flour, cornmeal, salt, black pepper, and paprika. In another bowl, place the beaten eggs.

Breading the Shrimp

Dip each shrimp first into the egg, then dredge in the flour-cornmeal mixture, coating evenly.

Fry the Shrimp

In a large skillet, heat vegetable oil over medium-high heat. Once hot, fry the breaded shrimp in batches until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

Assemble the Sandwich

Slice the hoagie rolls lengthwise. Spread a generous amount of Remoulade sauce inside each roll. Add shredded lettuce, sliced tomato, and top with crispy shrimp.
