Cooking Instructions
- 1
Prepare the Batter
In a mixing bowl, whisk together the flour, baking powder, sugar, and salt. In another bowl, beat the egg and mix in the buttermilk and melted butter. Combine the wet and dry ingredients until just mixed; some lumps are okay.
- 2
Add Blueberries
If using blueberries, gently fold them into the batter.
- 3
Cook the Pancakes
Heat a non-stick skillet over medium heat and lightly grease it. Pour 1/3 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook for another 1-2 minutes until golden brown.
- 4
Serve
Serve the pancakes warm, stacked three high, and top with additional blueberries if desired.
