    Make the Batter

    In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt. In another bowl, combine the milk, egg, and melted butter. Gradually add the wet ingredients to the dry ingredients and mix until just combined. If using, fold in the blueberries.

    Cook the Pancakes

    Heat a non-stick skillet or griddle over medium heat. Pour 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, about 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown.

Hash Browns

    Prepare the Potatoes

    Peel and grate the russet potatoes. Rinse the grated potatoes in cold water and drain thoroughly. Squeeze out excess moisture using a clean kitchen towel.

    Cook the Hash Browns

    In a skillet, heat the vegetable oil over medium heat. Add the grated potatoes and chopped onion. Season with salt and black pepper. Cook, pressing down with a spatula, until golden brown and crispy, about 5-7 minutes on each side.
