Prepare Halibut
Rinse the halibut fillets under cold water and pat them dry with paper towels.

Set up breading station
In three separate shallow bowls, place flour seasoned with salt and pepper in the first bowl, beaten eggs in the second bowl, and panko breadcrumbs in the third bowl.

Bread the Halibut
Dredge each halibut fillet in the flour, shaking off the excess, then dip it into the beaten eggs, and finally coat it with panko breadcrumbs, pressing gently to adhere.

Heat oil
In a large skillet, heat the vegetable oil over medium heat until shimmering.

Cook the burgers
Carefully place the breaded halibut fillets in the hot oil and cook for about 4-5 minutes on each side, or until golden brown and cooked through.

Assemble the burgers
Toast the burger buns if desired. Place a lettuce leaf on the bottom half of each bun, followed by a cooked halibut fillet, a slice of tomato, and a generous dollop of tartar sauce. Top with the other half of the bun.

Serve the halibut burgers hot with any additional tartar sauce on the side.
