1. Prepare the Vegetables

Chop the green bell pepper, onion, mushrooms, and tomato into small pieces. Dice the avocado and set aside.

2. Whisk the Eggs

In a bowl, whisk together the eggs, salt, and pepper until well combined.

3. Sauté the Vegetables

In a non-stick skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 2 minutes. Then, add the green bell pepper and mushrooms, cooking until softened, about 3-4 minutes. Finally, add the tomato and cook for an additional minute.

4. Cook the Omelet

Pour the whisked eggs over the sautéed vegetables in the skillet. Allow it to cook undisturbed for about 2-3 minutes until the edges begin to set. If using cheese, sprinkle it on half of the omelet at this point.

5. Fold and Serve

Once the eggs are mostly set, carefully fold the omelet in half using a spatula. Cook for an additional minute. Slide the omelet onto a plate and top with diced avocado. Serve immediately.
