Make the Biscuits
Preheat your oven to 450°F (230°C). In a large bowl, mix together the flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the milk until just combined. Turn the dough onto a floured surface and knead gently. Roll out to about 1-inch thickness and cut out biscuits. Place on a baking sheet and bake for 10-12 minutes or until golden.

Prepare the Sausage Gravy
In a skillet over medium heat, cook the breakfast sausage until browned. Sprinkle the flour over the sausage and stir to combine. Gradually add the milk, whisking continuously to avoid lumps. Cook until the gravy thickens, about 5-7 minutes. Season with black pepper and salt to taste.

Assemble
Split the baked biscuits in half and place them open-faced on a plate. Spoon the sausage gravy generously over the biscuits and serve hot.
