1. Prepare the Ingredients

Chop the reindeer sausage, green bell pepper, onion, and mushrooms into small pieces.

2. Cook the Sausage and Vegetables

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped reindeer sausage and cook until browned, about 3-4 minutes. Add the green bell pepper, onion, and mushrooms, and sauté until the vegetables are tender, about another 5 minutes. Season with salt and black pepper.

3. Prepare the Eggs

In a bowl, whisk together the eggs and a pinch of salt until well combined.

4. Cook the Omelet

In the same skillet, add the remaining tablespoon of olive oil and pour in the whisked eggs. Allow the eggs to cook undisturbed for 2-3 minutes until the edges start to set.

5. Add the Filling

Once the eggs are set but still slightly runny in the center, add the cooked sausage and vegetable mixture on one half of the omelet. Fold the other half over the filling.

6. Finish Cooking

Cook for another minute until the omelet is fully set and slightly golden. Slide the omelet onto a plate and serve hot.
