    Prepare the Potatoes

    Peel and cut the potatoes into thick strips to make chips. Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.

    Make the Batter

    In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold sparkling water until smooth. Let it rest for about 15 minutes.

    Heat the Oil

    In a deep pot or fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Chips

    Drain the soaked potatoes and pat them dry with a kitchen towel. Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels. Season with salt.

    Fry the Halibut

    Dip the halibut fillets into the batter, allowing excess to drip off. Carefully place them in the hot oil and fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

    Serve the crispy Alaska halibut with the chips and lemon wedges on the side.
