Preheat Oven
Preheat your oven to 375°F (190°C).

Prepare the Halibut
Rinse the halibut fillets under cold water and pat dry with paper towels. Season both sides with salt and black pepper.
Stuffing the Fish

Sauté Spinach and Garlic
In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add 2 cups of fresh spinach and sauté until wilted, about 2-3 minutes.

Combine Stuffing Ingredients
In a bowl, combine the cooked quinoa, sautéed spinach, crumbled feta cheese, cherry tomatoes, lemon juice, salt, and black pepper. Mix well to combine.

Stuff the Halibut
Take each halibut fillet and make a pocket in the side by slicing it carefully with a sharp knife. Stuff each pocket with the quinoa mixture generously.

Prepare the Topping
In a small bowl, mix together the bread crumbs, chopped parsley, and grated Parmesan cheese.

Add Topping and Bake
Place the stuffed halibut fillets in a baking dish. Sprinkle the breadcrumb mixture evenly over the top of each fillet. Bake in the preheated oven for about 20-25 minutes, or until the fish is cooked through and the topping is golden brown.

Remove the halibut from the oven and let it rest for 5 minutes before serving. Garnish with additional parsley if desired.
