Cooking the Pasta

Boil the Pasta

In a large pot, bring water to a boil. Add 1 tablespoon of salt to the boiling water. Add the pasta to the pot and cook according to package instructions until al dente (usually about 8-10 minutes).

Drain and Rinse

Once cooked, drain the pasta and rinse it under cold water to stop the cooking process. Set aside.

Preparing the Vegetables

Sauté the Vegetables

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Then add the red onion and bell pepper, cooking for an additional 3-4 minutes until softened.

Add Tomatoes and Spinach

Add the halved cherry tomatoes and spinach to the skillet. Cook for another 2-3 minutes until the spinach wilts and the tomatoes are slightly softened.

Incorporate Olives and Seasoning

Stir in the sliced olives, dried oregano, red pepper flakes, black pepper, and salt. Cook for an additional 1-2 minutes to heat through.

Combining Ingredients

Combine Pasta and Vegetables

Add the drained pasta to the skillet with the sautéed vegetables. Toss to combine everything well.

Prepare the Dressing

In a small bowl, whisk together the remaining olive oil and lemon juice. Pour over the pasta and vegetable mixture.

Add Feta and Serve

Finally, add the crumbled feta cheese and toss everything again to distribute evenly. Serve warm or at room temperature.
