For the Prime Rib

Prepare the Prime Rib
Preheat your oven to 450°F (232°C). Rub the prime rib roast with olive oil, then season generously with salt, black pepper, garlic powder, and onion powder. Place fresh rosemary sprigs on top.

Roast the Prime Rib
Place the seasoned prime rib in a roasting pan and roast in the preheated oven for about 20 minutes. Then reduce the temperature to 325°F (163°C) and continue roasting for about 1.5 to 2 hours, or until the internal temperature reaches 130°F (54°C) for medium rare.

Rest the Prime Rib
Remove the roast from the oven and let it rest for at least 20 minutes before slicing. This helps retain the juices.

Prepare the Au Jus
In a saucepan, combine beef broth, Worcestershire sauce, minced garlic cloves, and fresh thyme. Bring to a simmer and let it cook on low for about 15 minutes.

Strain the Au Jus
After simmering, strain the mixture to remove the garlic and thyme. Keep the au jus warm until serving.

Slice the French rolls in half and butter the insides. Place them on a baking sheet.

Preheat your broiler. Place slices of provolone cheese on the buttered insides of the rolls and broil until the cheese is melted and bubbly.

Thinly slice the rested prime rib roast and place the slices inside the melted cheese rolls. Serve hot with a bowl of au jus on the side for dipping.
