Method
Preparation
- 1
Preheat the Oven
Preheat your oven to 450°F (232°C). This high temperature will help to create a nice crust on the roast.
- 2
Season the Roast
In a small bowl, combine the kosher salt, black pepper, garlic powder, chopped fresh rosemary, and thyme. Rub the mixture all over the prime rib roast, ensuring it is evenly coated.
- 3
Prepare the Roast
Drizzle the olive oil over the seasoned roast and rub it in to help the seasonings adhere.
Cooking
- 4
Roast the Meat
Place the prime rib roast on a rack in a roasting pan, bone side down. Insert a meat thermometer into the thickest part of the roast, avoiding the bone. Roast in the preheated oven for 20 minutes.
- 5
Lower the Temperature
After 20 minutes, reduce the oven temperature to 325°F (163°C) and continue roasting until the internal temperature reaches 120°F (49°C) for rare, 130°F (54°C) for medium-rare, or 140°F (60°C) for medium. This will take about 1.5 to 2 hours, depending on the size of the roast.
- 6
Rest the Meat
Once the desired temperature is reached, remove the roast from the oven and cover it loosely with aluminum foil. Let it rest for at least 20 minutes to allow the juices to redistribute.
Serving
- 7
Slice and Serve
After resting, slice the prime rib into thick slices. If desired, serve with a side of beef broth or red wine for dipping.
