Preheat the Oven
Preheat your oven to 375°F (190°C).

Sauté Spinach and Garlic
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add fresh spinach and cook until wilted, about 2-3 minutes. Remove from heat and let it cool slightly.

Prepare the Stuffing
In a mixing bowl, combine the cream cheese, wilted spinach, feta cheese, lemon juice, salt, black pepper, and dried oregano. Mix until well blended.
Stuffing the Salmon

Prepare Salmon Fillets
Place the salmon fillets skin-side down on a cutting board. Make a pocket in each fillet by slicing horizontally, being careful not to cut all the way through.

Fill the Salmon
Stuff each salmon pocket with the prepared cheese and spinach mixture, pressing gently to pack it in.
Baking

Arrange in Baking Dish
In a baking dish, drizzle the remaining tablespoon of olive oil. Place the stuffed salmon fillets in the dish.

Bake in the preheated oven for 20-25 minutes or until the salmon flakes easily with a fork and the filling is heated through.
