Preparing the Chips

    Cut the Potatoes

    Peel the russet potatoes and cut them into thick strips, about 1/2 inch wide.

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch.

    Dry the Potatoes

    Drain the potatoes and spread them out on a clean kitchen towel to dry thoroughly.

    First Fry

    In a deep pot, heat 4 cups of vegetable oil to 325°F (163°C). Fry the potatoes in batches for about 4-5 minutes, until they are soft but not browned. Remove and drain on paper towels.

Preparing the Fish

    In a mixing bowl, combine 1 cup flour, 1 cup cornstarch, 1 tsp baking powder, and 1 tsp salt. Gradually whisk in 1 cup cold sparkling water until smooth and well combined.

    In another deep pot, heat 4 cups of vegetable oil to 350°F (175°C).

    Dip each fish fillet into the batter, ensuring it is fully coated.

    Carefully place the battered fish fillets into the hot oil. Fry for about 4-5 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels.

Final Fry of Chips

    Increase the oil temperature to 375°F (190°C). Fry the pre-cooked chips again in batches for about 3-4 minutes until they are golden and crispy. Drain on paper towels and sprinkle with salt.
