Zucchini Noodles Preparation

Spiralize the Zucchini
Using a spiralizer, spiralize the zucchini into noodles. If you don't have a spiralizer, you can use a vegetable peeler to create thin strips.

Salt the Zoodles
Place the spiralized zucchini into a colander and sprinkle with salt. Let sit for 15 minutes to draw out excess moisture.

Sauté the Zoodles
Heat olive oil in a large skillet over medium heat. Add the salted zucchini noodles and sauté for 3-5 minutes until tender but still firm. Remove from heat and set aside.

Cook the Chicken
In the same skillet, add more olive oil if needed. Season the chicken breasts with black pepper and cook for 5-7 minutes on each side until cooked through. Remove from the skillet and let rest.

In the same skillet, add garlic (minced), artichoke hearts, mushrooms, and capers. Sauté for 2-3 minutes until the vegetables are tender. Add lemon juice and stir to combine.

Slice the cooked chicken and return it to the skillet with the sauce. Serve over the sautéed zoodles.

Season the beef tenderloin with lemon zest, black pepper, and garlic powder. Let it marinate for 15 minutes.
