Method
Preparation
Cook the Pasta
Bring a large pot of salted water to a boil. Add the angel hair pasta and cook according to package instructions until al dente, about 4-5 minutes. Drain and set aside.
Cooking Seafood
Sear the Scallops
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Season the scallops with salt and black pepper. Once the oil is hot, add the scallops and sear for about 2-3 minutes on each side until golden brown. Remove from the skillet and set aside.
Cook the Shrimp
In the same skillet, add the remaining tablespoon of olive oil. Add the shrimp and cook for 2-3 minutes until they turn pink and opaque. Remove and set aside with the scallops.
Making the Sauce
Prepare the Sauce
In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Add the cherry tomatoes and cook for 2-3 minutes until they start to soften.
Add Wine and Basil
Pour in the white wine and bring to a simmer. Let it reduce for about 5 minutes. Stir in the chopped basil and season with salt and black pepper to taste.
Serving
Plate the Dish
Serve the seafood mixture over the cooked angel hair pasta. Garnish with additional fresh basil if desired.
