Vegetarian Bolognese Sauce

Veggie Brown Rice

Method

Preparing the Bolognese Sauce

    Sauté Vegetables

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion, carrot, and celery, and sauté for about 5 minutes until softened.

    Add Garlic

    Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

    Add Vegetarian Beef

    Add 1 cup of vegetarian ground beef to the skillet, breaking it apart with a spoon. Cook for about 5 minutes until browned.

    Add Tomatoes and Spices

    Stir in the canned crushed tomatoes, tomato paste, vegetable broth, dried basil, dried oregano, salt, black pepper, and red pepper flakes. Mix well to combine.

    Simmer

    Reduce the heat to low, cover the skillet, and let the sauce simmer for about 20-25 minutes, stirring occasionally.

Cooking the Veggie Brown Rice

    Rinse Rice

    Rinse 1 cup of brown rice under cold water until the water runs clear.

    Cook Rice

    In a medium saucepan, combine the rinsed brown rice, 2 cups of water, and 1 teaspoon of salt. Bring to a boil, then reduce the heat to low, cover, and simmer for about 40-45 minutes until the rice is tender and the water is absorbed.

Serving

    Plate the Dish

    Once both the sauce and rice are cooked, serve the vegetarian Bolognese sauce over a scoop of veggie brown rice. Enjoy!
