Vegan Hamburger Patty

    Prepare the Flax Egg

    In a small bowl, mix the ground flaxseed with water and let it sit for about 10 minutes until it becomes thick and gel-like.

    Combine Patty Ingredients

    In a large mixing bowl, combine the mashed black beans, cooked quinoa, rolled oats, chopped onion, minced garlic, soy sauce, smoked paprika, salt, and black pepper.

    Add Flax Egg

    Add the prepared flax egg to the mixture and mix until well combined.

    Form Patties

    Shape the mixture into burger patties, about 1/2 inch thick.

    Grill the Patties

    Heat a grill or grill pan over medium heat. Cook the patties for about 5-6 minutes on each side, until they are heated through and have grill marks.

Veggie Brown Rice

    Cook the Brown Rice

    In a saucepan, combine the uncooked brown rice and vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for about 40-45 minutes or until the rice is tender.

    Once the rice is cooked, stir in the mixed vegetables, olive oil, and salt. Cover and let it sit for an additional 5 minutes to heat the vegetables through.

    Preheat the grill. Toss the halved tomato and broccoli florets with olive oil, salt, and black pepper.
