Preparation of Veal

    Preheat the oven to 375°F (190°C).

    Tenderize the veal cutlets by gently pounding them to about 1/4 inch thick using a meat mallet.

    Season both sides of the veal cutlets with salt and black pepper.

Breading

    Set up a breading station: Place the flour in one shallow dish, beat the eggs in another shallow dish, and combine the bread crumbs and grated Parmesan cheese in a third shallow dish.

    Dredge each veal cutlet in flour, shaking off any excess, then dip into the beaten eggs, and finally coat with the breadcrumb and Parmesan mixture, pressing gently to adhere.

Cooking

    In a large skillet, heat the olive oil over medium heat. Once hot, add the breaded veal cutlets, cooking for about 3-4 minutes per side until golden brown.

Sauce Preparation
